Fruit smoothies

When the weather starts to warm up for a brief moment in winter, I like to make the yummiest fruit smoothies to take advantage of the warmth and sunshine. As soon as I read the weather report for this week, I sprinted to Sprouts and loaded up on fresh fruit to make these recipes…

Strawberry & Mango. Two of my favorite fruits blended with a bit of yogurt always brightens my mood. I have packets of mango that I saved in my freezer from a couple of months ago, and I danced around happily while I put together my Monday smoothie.

  • 1 1/4 c. apple juice
  • 1 c. low-fat plain yogurt
  • 1 c. strawberries
  • 2 c. mango chunks

Pineapple & Coconut. I purchased a few pineapples and coconuts while I was at Sprouts and wondered how I could incorporate them in a smoothie. I settled on this recipe and have made it for my family a couple of times since our first tasting.

  • Freeze 2 c. coconut water in ice cube trays
  • 2 c. pineapple chunks
  • 2 c. mango chunks
  • 1 1/2 tbsp. lime juice
  • 1 tbsp. honey
  • 1/2 c. coconut water
Mixed berries. I like to freeze berries so that I can enjoy them throughout the year. I placed a handful of raspberries, blueberries, and strawberries in a blender with a bit of honey and almond milk, and I made a breakfast smoothie this morning. It was refreshing, delicious, and a total treat on my way to work.
